干烧菜肴要经过长时间的小火烧制,以使汤汁渗入主料内。干烧菜肴一般见油不见汁,其特点是油大、汁紧、味浓。

干烧要掌握的技法要点是,上色不可过重,否则烧制后的菜肴颜色发黑;干烧菜要把汤汁烧尽。 3、白烧、酱烧、葱烧等。

除了上述红烧、干烧以外,还有白烧、酱烧、葱烧等常见烧法。白烧不放酱油,一般用奶汤烧制。

酱烧、葱烤与红烧的方法基本相同,酱烧用酱调味上色,酱烧菜色泽金红,带有酱香味;葱烧用葱量大,约是主料的1/3,味以咸鲜为主,并带有浓重葱香味。 (二)炸的技法 炸是油锅加热后,放入原料,以食油为介质,使其成熟的一种方法。

采用这种方法加热的原料,一般要间隔炸两次,才能烹好。 炸的技法要领是,油量要多,对一些老的、形状大的原料,下锅时油温可低一些,炸的时间可长一些。

用炸的方法,烹制好的菜肴具有口感香酥、脆嫩的特色。 家庭厨房常用的炸的方法有清炸、干炸、软炸、酥炸、加面包粉炸等多种。

1、清炸。原料不经过挂糊上浆,用料料拌好后即投入油锅旺火炸制。

清炸主料外面没有保护层,必须根据原料的老嫩、大小来决定油温高低。主料质嫩或形状较小的,在油温五成热时下锅,炸的时间要短,炸至约八层熟时捞出,待炸料冷却后再下锅复炸一次即成。

如果用较长时间在油中一次炸成,就会失去炸料中的水分,使变得干枯,不能达到外脆里嫩的效果。主料开头较大、质地较老,则应在油温七成热时下锅,炸的时间可长一些,中间改用温油反复炸几次,使油温逐渐传导到原料的内部,炸熟即可。

2、干炸。干炸方法与清炸差不多,也是先把原料加以调味腌渍再炸。

所不同的是,干炸的原料下锅前还要拍粉挂糊。干炸时间要稍长一些,开始用旺火热油,中途改用温油小火,把原料炸至外皮焦脆即可。

干炸菜肴的特点,是原料失去水分较多,成菜外酥香,里软嫩。 3、软炸。

把主料腌渍一下后挂一层鸡蛋糊,再投入油锅炸制。软炸的油温,以控制在五层热为宜,炸到原料断生,外表发硬时,即可捞出,然后把油温烧到七八成热时,再把已断生的炸料下油锅一炸即成。

这种炸法时间短,成菜外脆时嫩。 4、酥炸。

炸法是行把原料煮熟或蒸熟后再下油锅炸。酥炸的原料要先在蒸、煮时调味好,下油锅炸时,火力要旺,油温控制在六七成热,炸至原料外层呈深黄色即可。

酥炸的特点,成菜酥香肥嫩。 5、滚面包粉炸。

把主料调味腌渍一下后,上浆,再滚一层面包粉,然后上油锅炸制。这种炸法,适用于炸猪排、炸鱼等。

用面包粉炸制的菜肴色泽金黄,外脆里嫩。 (三)爆的技法 爆是烹制脆性原料、韧性原料如肚子、鸡肫、鸭肫、鸡鸭肉、瘦猪肉、牛羊肉等所采用的快速加热成熟的方法。

爆,就是急、速、烈的意思,加热时间极短。用爆的方法烹制的菜肴脆嫩鲜爽。

爆可分为油爆、水爆,其技法如下: 1、油爆。就是热油爆炒。

油爆菜有两种制作方法:一种方法流行于我国北方地区,油爆时主料不上浆,只在沸水中一烫就捞出,然后放入热油锅中速爆,再下配料翻炒,烹入芡汁却可起锅。另生种方法流行于我国南方地区,油爆时主料要上浆,在热油锅中拌炒,炒熟后盛出,沥去油,锅内留少许余油,再把主料、配料、芡汁一起倒入爆炒即成。

油爆的烹调方法,适用于烹制油爆是、油爆肚仁等菜肴。制作油爆菜时,主料应切成块、丁等较小的形状,用沸水焯主料的时间不可过长,以防主料变老,焯后要沥干水分,主料下油锅爆炸时油量应为主料的二倍。

油爆菜用的芡汁,以能包裹住主料和配料为度。 2、水爆。

以水为加热体的一种爆法。水爆时把原料在沸水中加热使熟捞出,即可蘸调味料食用。

烹制荤料水爆菜的关键,是掌握好沸水焯原料的时间,以焯至主料无血,颜色由深变浅为好。如焯水的时间过长,主料便老而不脆;如焯水时间过短,主料会有腥味或半生不熟的现象。

爆的方法,除了油爆、水爆外,还有芜爆、葱爆、酱爆等法。这些爆菜的制作方法,与油爆法基本相同,不过配料和调料有所不同。

芜爆以芜爆(香菜)为主要配料:葱爆以葱丝或葱块(滚刀块)为配料,制作时和主料一起爆炒;酱爆就是爆制时放入炒熟甜面酱、黄酱或酱豆腐。 (四)炖的技法 炖是把原料放在锅内,用小火长时间加热制成菜肴的一种烹调方法。

炖最好使用砂锅或搪瓷锅。炖制法适用于肌纤维比较粗老的。
